2 peaches, diced
1 English cucumber, sliced
1 cup Odyssey Blueberry feta cheese
3 tbsp fresh lemon juice
1 tbsp dijon mustard
1 tbsp honey
1 tbsp olive oil
1 tbsp finely chopped basil
Salt and pepper to taste
- In a large serving bowl, combine peaches, cucumbers, and feta.
- To make the vinaigrette, combine lemon juice, Dijon mustard, honey, olive oil, basil, salt and pepper in a small bowl and whisk until well blended.
- Pour the vinaigrette over the salad and toss to mix. Garnish with extra basil; add salt and pepper to taste. Serve immediately or cover and refrigerate until ready to serve.
