Ingredients
BLUE CHEESE DRESSING:
- 4 ounces Blue Cheese
- 1 tablespoon minced fresh thyme
- 1/4 to 1/2 teaspoon salt
- 1/4 cup plain Odyssey Greek yogurt
- 1/4 cup buttermilk
- 1 tablespoon apple cider vinegar
- Coarsely ground pepper to taste
COLESLAW:
- 4 cups thinly sliced fresh kale
- 2 small fresh broccoli bunches
- 1 medium carrot, peeled
Directions
Blue Cheese Dressing:
- Place the blue cheese, thyme and salt in a bowl. Blend with a fork, breaking cheese into small crumbles. Gently stir in the yogurt, buttermilk and apple cider vinegar. Season with pepper to taste.
Coleslaw:
- Place kale in a large bowl. Add 2 tablespoons dressing. Massage dressing into kale for 3-4 minutes or until kale is soft.
- Cut broccoli florets from bunches; save florets for a different recipe. Peel the outer layer of broccoli stems with a vegetable peeler. Thinly slice stems into strips with a mandoline slicer or knife. Thinly slice carrot into strips or julienne. Add broccoli and carrot strips to kale mixture. Toss with remaining dressing. Serve immediately.
