Odyssey® Feta with Blood Oranges Salad

Odyssey Feta Blood Orange Salad

Ingredients

Salad:

  • 2 Blood Oranges; peeled, segmented, juice saved
  • ½ cup Small Red Onion, cut in half, thinly sliced
  • ½ cup Kalamata Olives, pited
  • 2 oz. Arugula
  • 1 tsp. Mint, finely chopped
  • 4 Tbsp. Traditional Odyssey® Feta Cheese Crumbles
  • Salt and Pepper, to taste

Odyssey Feta Dressing:

  • 3 Tbsp. Blood Orange juice
  • 1 Tbsp. Grated Orange zest
  • 1 Tbsp. Red Wine Vinegar
  • 1 Tbsp. Red Wine Vinegar
  • 1 Tbsp. Garlic, minced
  • ¼ cup Extra Virgin Olive Oil

Directions

  1. Peel orange and remove white pith parts from orange. Place oranges over small bowl and separate into segments, reserving juice while segmenting orange.
  2. In a medium serving bowl, add oranges, onions, olives, arugula, mint, cheese, salt and pepper; mix lightly.
  3. In a separate small bowl, add the remaining dressing ingredients, whisk together until frothy. Add dressing to salad, toss lightly.
  4. Serve immediately.
