Ginger Soup with Odyssey® Greek Yogurt

A traditional ginger soup with hints of curry. Spice up your tastebuds! Yields: 4 servings

Ingredients:

  • 1 onion, chopped
  • 2 tbsp fresh ginger, chopped
  • 2 tbsp olive oil
  • 3/4 tsp curry powder
  • 4 cups chicken stock
  • 1 lb. carrots, chopped
  • 1 red apple, peeled and chopped
  • 1/4 cup Odyssey® Plain Greek Yogurt
  • cilantro leaves for garnish

Directions:

  1. In a pot, cook first 4 ingredients over medium-high heat, stirring often, for 5 minutes.
  2. Add next 3 ingredients.
    Season.
    Bring to boil.
  3. Simmer, covered, until carrots are tender, about 20 minutes.
  4. Puree in blender; season.
  5. Top with yogurt and cilantro.
