Ingredients:
- 1 onion, chopped
- 2 tbsp fresh ginger, chopped
- 2 tbsp olive oil
- 3/4 tsp curry powder
- 4 cups chicken stock
- 1 lb. carrots, chopped
- 1 red apple, peeled and chopped
- 1/4 cup Odyssey® Plain Greek Yogurt
- cilantro leaves for garnish
Directions:
- In a pot, cook first 4 ingredients over medium-high heat, stirring often, for 5 minutes.
- Add next 3 ingredients.
Season.
Bring to boil. - Simmer, covered, until carrots are tender, about 20 minutes.
- Puree in blender; season.
- Top with yogurt and cilantro.
