Greek Salad Pizza

What if you could eat pizza while getting your daily greens in? Now you can with this Greek salad pizza! Salad greens, cucumbers, tomatoes, onions, and olives tossed in a Greek vinaigrette placed onto a pizza crust with Odyssey Brands Feta cheese and Greek yogurt is a slice of healthy heaven on a plate.

Ingredients

Salad

  • 6 cups salad greens
  • 1 seedless cucumber, sliced
  • 1 pint grape tomatoes
  • 1/2 red onion, thinly sliced
  • 3/4 cup Kalamata olives, sliced
  • 8oz Odyssey Feta Cheese (cubed)
  • 1 pizza crust or flatbread, baked
  • 5oz Odyssey Plain Greek Yogurt
  • 1/4 cup Greek Vinaigrette (see below)

Greek Vinaigrette

  • 2 tbsp white balsamic vinegar
  • 4 tbsp extra virgin olive oil
  • 1 tsp fresh lemon juice
  • 1 shallot, finely chopped
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  1. In a bowl, add balsamic vinegar, lemon juice, shallot, oregano. Slowly whisk in olive oil.

  2. Add salt & pepper to taste.

  3. Combine salad and veggies, toss with 1/4 cup vinaigrette.

  4. Spread Odyssey Greek yogurt onto pizza crust, top with mixed salad and Odyssey Feta Cheese

  5. Enjoy!
