Mediterranean Grilled Cheese

Odyssey Feta Grilled Cheese

  • 8 slices Italian Bread
  • 4 thick slices of Buholzer Brother’s Brick Cheese
  • 1, 14oz. can artichoke hearts, drained & chopped
  • 2 handfuls fresh spinach, roughly chopped
  • 1/2 cup Kalamata olives, sliced
  • 4oz. Odyssey Feta Cheese, crumbled
  • 8oz. Odyssey Plain Greek Yogurt, choose from 0%, 2%, or 10%
  • 1/2 cup red onion, diced
  • 3 garlic cloves, minced
  • 2 tsp Dijon mustard
  • 2 tbsp butter


  1. In a large bowl, mix artichoke hearts and Greek yogurt along with Dijon mustard. Heat griddle or frying pan to medium heat.
  2. To assemble the sandwich, lay 1 slice of bread on cutting board or work surface. Place 1 slice of brick cheese on the bread. Place 1 cup of artichoke filling on top of brick cheese. Top with slice of bread.
  3. Melt butter in the pan. Repeat with remaining bread and ingredients. Lay each sandwich in the pan, cheese side down.
  4. Grill until the cheese begins to melt. Flip the sandwich and continue grilling until artichoke filling is heated through and bread has turned golden brown.
