Roasted Acorn Squash and Feta Cheese

Perfect comfort food for those chilly fall nights. Yields 2 servings

  • 1 Acorn Squash
  • 1 tbsp Butter
  • 1 tbsp Brown Sugar
  • 1 tbsp Balsamic Vinegar
  • Cinnamon to taste
  • Nutmeg to taste
  • 8 oz. Odyssey Traditional Feta Cheese
  • 12 tbsp Balsamic Glaze


  1. Preheat oven to 400 degrees F.
  2. On a cutting board, cut squash in half, remove seeds. In each half, add butter, balsamic vinegar, sugar, cinnamon and nutmeg.
  3. Place in a baking dish and bake 1 hour or until tender. Remove squash from oven, sprinkle with feta cheese.
    Serve immediately.
