- 1 medium Cucumber, peeled and diced small
- 3 Tbsp. Fresh Garlic, minced
- 1 Tbsp. Fresh Mint, chiffonade

- 1 Tbsp. Extra Virgin Olive Oil
- 1 Tbsp. Lemon Juice
- Salt and Pepper, to taste
