Festive Odyssey® Feta Salad with Blood Oranges

Yields: 2 servings

 2 blood oranges, peeled, segmented, juice saved
 ½ small red onion, cut in half, thinly sliced
 ½ cup Kalamata olives, pitted
 2 oz arugula
 1 tsp mint, finely chopped
 4 tbsp Odyssey® Traditional Feta Cheese, crumbled
 salt and pepper to taste
Odyssey®Feta Dressing
 3 tbsp blood orange juice
 1 tbsp grated orange zest
 1 tbsp red wine vinegar
 1 tbsp garlic, minced
 ¼ cup extra virgin olive oil

1. Peel orange and remove white pith parts from orange. Place oranges over small bowl and separate into segments, reserving juice while segmenting orange.


2. In a medium serving bowl, add oranges, onions, olives, arugula, mint, cheese, salt and pepper; mix lightly. In a separate bowl, add the remaining dressing ingredients, whisk together until frothy. Add dressing to salad, toss lightly.
Serve immediately.
