Feta and Olive Tapenade

3 cups pitted mixed olives, drained
1 ½ cups chopped fresh parsley, divided
3 tbsp capers, drained
3 garlic cloves
¼ cup olive oil
2 tbsp lemon juice
½ tsp coarsely ground pepper
1 cup Odyssey® Crumbled Feta cheese (6 ounces)
Assorted crackers, breadsticks and charcuterie
Place the olives, 3/4 cup parsley, capers and garlic in a food processor; cover and pulse until mixture is minced.
1. Transfer olive mixture to a large bowl.
2. Stir in the olive oil, lemon juice, pepper and remaining parsley.
3. Cover and refrigerate mixture for at least 30 minutes or until serving. Fold in feta.
Serve with crackers, breadsticks and charcuterie.
