Feta Avocado Dip

3 Roma tomatoes, diced
¼ cup red onion, diced
1 bunch fresh cilantro, finely chopped
1 clove garlic, minced
1 tbsp olive oil
2 tbsp red wine vinegar
4 oz Odyssey traditional feta cheese, crumbled
3 avocados, cut into chunks
pinch of fresh thyme
salt & pepper to taste
1. Combine all ingredients in a bowl.
2. Serve with tortilla chips.
Recipe can be made and served immediately, but flavors taste better when they have had time to marinate.
