1 green bell pepper, diced
½ medium sweet onion, diced
3 cups slices, fresh or frozen okra
2 cups fresh or frozen corn
15 oz can petite diced tomatoes, undrained
1 tbsp tomato paste
½ tsp creole seasoning
¼ tsp dried thyme
1 tsp hot pepper sauce
9 oz chunk Odyssey Traditional Feta Cheese
salt and pepper
Directions:
1Heat oil and butter over medium heat in a large skillet. Add green pepper and onion and cook until starting to soften, about 3 minutes.
2Add okra and corn and cook, stirring occasionally for 8 minutes.
3Add diced tomatoes, tomato paste, Creole seasoning, thyme and hot pepper sauce; stir. Let simmer for about 3 minutes. Add feta and stir to combine.
4Add salt and pepper to taste.
