Ginger Soup with Odyssey® Greek Yogurt

1 onion, chopped
2 tbsp fresh ginger, chopped
2 tbsp olive oil
¾ tsp curry powder
4 cups chicken stock
1 lb carrots, chopped
1 red apple, peeled and chopped
¼ cup Odyssey® Plain Greek Yogurt
cilantro leaves for garnish
In pot, cook first 4 ingredients over medium-high heat, stirring often (5 minutes).
Add next 3 ingredients.
Season; bring to boil.
Simmer; covered, until carrots are tender (about 20 minutes).
Puree in blender; season.
Top with yogurt and cilantro.
