Greek Salad Pizza

Yields: 6 servings

For the salad:
 6 cups Salad Greens
 1 Seedless Cucumber Sliced
 2 cups Grape Tomatoes
 ½ Red Onion Thinly Sliced
 ¾ cup Kalamata Olives Sliced
 8 oz Odyssey Feta (Cubed)
 ¼ cup Odyssey Plain Greek Yogurt
 1 Pizza Crust or Flatbread Baked
 ¼ cup Greek Vinaigrette (see below)
For the vinaigrette:
 2 tbsp White Balsamic Vinegar
 4 tbsp Extra Virgin Olive Oil
 1 tbsp Fresh Lemon Juice
 1 Shallot finely chopped
 1 tsp Dried Oregano
 ½ tsp Salt
 ½ tsp Pepper

In a bowl add balsamic vinegar, lemon juice, shallot, oregano. Slowly whisk in olive oil. Add salt and pepper to taste.


Combine salad and veggies, toss with vinaigrette.


Spread Greek yogurt onto pizza crust, top with salad and Odyssey Feta.


Slice and enjoy!
