Odyssey® Feta and Balsamic Roasted Acorn Squash

Yields: 2 servings

 1 acorn squash
 1 tbsp butter
 1 tbsp brown sugar
 1 tbsp balsamic vinegar
 cinnamon to taste
 nutmeg to taste
 8 oz Odyssey® Feta Cheese, crumbled
 12 tbsp balsamic glaze

Preheat oven to 400 degrees F.
Cut acorn squash in half, remove seeds.
Add butter, balsamic vinegar, sugar, cinnamon, and nutmeg.


Place on baking dish and roast 1 hour.
Remove from oven and sprinkle with feta and drizzle with balsamic glaze.
