Ingredients
Marinade Ingredients:
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp ground cumin
- 2 tsp smoked paprika
- 2 tsp salt
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp cayenne pepper, ground
- 1 garlic clove, minced
- ½ tsp ground black pepper
- 3 chicken breasts
Marinade Instructions:
Add marinade ingredients to a small bowl, stir to combine. Add chicken to a resealable bag or container. Add marinade and toss to coat all sides of chicken. Seal and place in fridge for 1 hour to overnight.
Pitas:
- 1 red onion, sliced
- Odyssey Tzatzki Dip
- Odyssey Feta Cheese, crumbled
- English cucumber, diced
- 1 Roma tomato, diced
Directions
Assembly Instructions:
- Preheat oven to 425°. Prepare a 9×13 baking dish with non-stick cooking spray.
- Add onion to container with chicken and toss to coat in remaining marinade. Remove from container and spread evenly in baking dish.
- Bake chicken for 40-45 minutes or until internal temperature reaches 165°. Remove from oven and let rest for 5 minutes before slicing.
Assemble pitas by spreading tzatziki dip on pita, then layer with remaining ingredients: chicken, onions, cucumber, tomato and crumbled feta
