Chicken Shawarma Pita

Ingredients

Marinade Ingredients:

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp ground cumin
  • 2 tsp smoked paprika
  • 2 tsp salt
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp cayenne pepper, ground
  • 1 garlic clove, minced
  • ½ tsp ground black pepper
  • 3 chicken breasts

Marinade Instructions:

Add marinade ingredients to a small bowl, stir to combine. Add chicken to a resealable bag or container. Add marinade and toss to coat all sides of chicken. Seal and place in fridge for 1 hour to overnight.

Pitas:

  • 1 red onion, sliced
  • Odyssey Tzatzki Dip
  • Odyssey Feta Cheese, crumbled
  • English cucumber, diced
  • 1 Roma tomato, diced

Directions

     

Assembly Instructions:

  1. Preheat oven to 425°. Prepare a 9×13 baking dish with non-stick cooking spray.
  2. Add onion to container with chicken and toss to coat in remaining marinade. Remove from container and spread evenly in baking dish.
  3. Bake chicken for 40-45 minutes or until internal temperature reaches 165°. Remove from oven and let rest for 5 minutes before slicing.

      Assemble pitas by spreading tzatziki dip on pita, then layer with remaining ingredients: chicken, onions, cucumber, tomato and crumbled feta
