Ingredients
Salad:
- 2 Blood Oranges; peeled, segmented, juice saved
- ½ cup Small Red Onion, cut in half, thinly sliced
- ½ cup Kalamata Olives, pited
- 2 oz. Arugula
- 1 tsp. Mint, finely chopped
- 4 Tbsp. Traditional Odyssey® Feta Cheese Crumbles
- Salt and Pepper, to taste
Odyssey Feta Dressing:
- 3 Tbsp. Blood Orange juice
- 1 Tbsp. Grated Orange zest
- 1 Tbsp. Red Wine Vinegar
- 1 Tbsp. Garlic, minced
- ¼ cup Extra Virgin Olive Oil
Directions
- Peel orange and remove white pith parts from orange. Place oranges over small bowl and separate into segments, reserving juice while segmenting orange.
- In a medium serving bowl, add oranges, onions, olives, arugula, mint, cheese, salt and pepper; mix lightly.
- In a separate small bowl, add the remaining dressing ingredients, whisk together until frothy. Add dressing to salad, toss lightly.
- Serve immediately.
