Smoked Feta and Salmon Pasta Salad

Ingredients

2 salmon fillets (approx. 7-8 oz each), seasoned with salt and pepper

1 tbsp olive oil

4 oz spring mix, or your favorite greens

½ red bell pepper cut into 1” pieces

3/4 cup English cucumber, sliced

¼ cup red onion, thinly sliced

½ cup Odyssey Smoked Feta cheese, crumbled

1 avocado, sliced

2 tbsp capers

Honey Dijon salad dressing

Directions

In a large pan over medium-high heat, add olive oil. Add the seasoned salmon to the hot pan. Cook until golden and crisp, about four minutes. Flip and reduce heat to medium. Continue cooking about 4-5 minutes more or until the salmon reaches an internal temperature of 145°.

Assemble salads by evenly distributing ingredients into two salad bowls.
