Ingredients
Beer Cheese Sauce Ingredients:
- 2 tbsp butter
- 1/4 cup all-purpose flour
- amber beer
- 3/4 cup half and half
- 1/2 tbsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp chili powder
- 1/8 tsp cayenne powder
- Buholzer Brothers Brick cheese, shredded
- Buholzer Brothers Gouda cheese, shredded
- ¼ cup prepared salsa (spiciness to your liking)
Loaded Tots Ingredients:
- 2 lbs tater tots, baked or deep fried (can sub french fries if desired)
- 1 lb ground beef, cooked and crumbled and mixed with taco seasoning (according to package directions)
- 1 Roma tomato, diced
- Odyssey Southwest Dip (mix with a little water to thin if needed)
- 4 green onions, sliced
Directions
Beer Cheese Sauce Instructions:
- In a medium saucepan over medium heat, add the butter and melt. Whisk in flour until completely absorbed, about 1 minute.
- Slowly pour in beer and half and half while continuing to whisk.
- Add mustard, Worcestershire sauce, garlic powder, onion powder, chili powder and cayenne powder, whisking to combine.
- Bring to a boil while continuing to whisk. Then reduce heat to low and simmer until thickened enough to coat the back of a spoon, about 3 minutes.
- With the heat on low, slowly add Buholzer Brothers brick and gouda cheeses, whisking as you add handfuls at a time, melting before adding more.
Add tater tots to a platter. Then top with ground beef, beer cheese sauce, tomatoes, southwest dip and green onions. Serve hot.
