Baked Feta & Veggie Salad

Ingredients

Marinade Ingredients:

  • ¼ cup olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp minced garlic
  • ½ tsp dried rosemary
  • ½ tsp paprika
  • 1 tsp thyme
  • ½ tsp kosher salt
  • ½ tsp black pepper
 

Veggies & Feta (5 cups total)

  • Cauliflower
  • Green beans
  • Red bell pepper
  • Yellow bell pepper
  • Zucchini
  • Cherry Tomatoes
  • Broccoli
  • Carrots
  • Red onion
  • 8 oz package Odyssey Mediterranean Herb feta cheese, sliced ¼ inch thick
  • Lemon for garnish

Directions

  1. 1.     Preheat oven to 400°. Coat a baking sheet with non-stick cooking spray.

    2.     Combine marinade ingredients in a bowl. 

    3.     Arrange veggies and feta on a sheet pan in rows. Drizzle with marinade evenly over veggies and feta.

    4.     Bake for 20-25 minutes.

    5.     Serve on a platter with a fresh squeeze of lemon juice.
